Food is Elementary Video...


Food Matters (formerly Food is Elementary)

I am currently a volunteer at the school featured in this video.  It is an amazing program and a wonderful rewarding way to spend my Thursday mornings!

Looking Forward to Spring: Reason #1...


Camping.

 Iall of it,

-Loading up my little yellow bug and being surprised every time just how much stuff we can pack in it.  

-Thinking it's a good idea to go on the longest hike the park offers, then remembering that 7 miles on flat pavement is not equivalent to 7 miles up and down hills. 

-Planning the menu and welcoming the challenge prepare delicious healthy food that only require ice and a campfire.

-Organizing the campsite, at least 5 x day.

-Drinking cold beers from the cooler!!

-The look on Chas' face when I'm done with all of the above and it occurs to me that there is no internet, no cellphone service, we have no more light (because he forgot to pack the tiki torch fuel) and I say, "Soooo, what are we supposed to do?"

New England Wild Rice...

Last night for dinner I made this delicious dish that I first tried with our kindergarten class on "New England" week.  I got a rotisserie chicken from Wholefoods and made this tasty recipe to have as a side. 


New England Wild Rice

1/8 cup Olive Oil
1/4 teaspoon ground Allspice
1/2 Vidalia Onion (sweet onion) finely diced
1 teaspoon Garlic, minced
2 cups Apples, diced (about 2 small)
2 cups of Wild & Whole Grain Brown Rice blend (cooked)
1 cup dried Cranberries (optional)
1/4 cup Maple Syrup
1/4 cup fresh Sage leaves, finely chopped
2 cups of cooked Butternut Squash, medium diced (cooked)
Kosher Salt to taste

Method:

Saute the onion, garlic and allspice in olive oil until soft.  Add the apples and cook until soft (medium-low heat).  Add the rice, squash, cranberries, maple syrup and sage leaves and season with salt. 

* I add the butternut squash last, so I can stir everything together without mashing up my squash!

Happy (belated) Valentine's Day...


 Cape Cod, MA

One of the most wonderful days I can recall.

Picturesque indian summer weather, wonderful company, sandwiches on the beach on a makeshift 'one love' boat table, off season crowds, off season hotel prices.

The very best moment was when we decided that coming home was a bad idea.  We would have to stay for a couple more days, in a cozy little beach villa at the tip of the Cape.
